The Eba is prepared by stirring and kneading garri in boiling water until it forms a soft and firm dough, providing the essential starch base for this dish. The soup itself is prepared by frying ground melon seeds directly in palm oil and simmering with tender assorted meats and smoked fish, resulting in a rich, nutty texture. Fresh leafy vegetables are folded in last, lending their vibrant colour and nutritional integrity to the rich, ground melon base.
Egusi (melon seeds) is a powerhouse of plant-based protein, cholesterol, and healthy unsaturated fats.
