The black jewel of Yoruba cuisine, Amala remains the definitive swallow, prized for its soft, cohesive texture, and the way it’s light but filling at the same time. This portion contains a generous serving, ideal for a satisfying meal.
Amala is prepared from dried yam milled into flour, which is carefully mixed and kneaded with boiling water until it forms a smooth, soft dough. The final result is a distinctive light brown to dark grey colour with a characteristic smooth finish.
This staple is primarily an excellent source of complex carbohydrates, providing sustained energy essential for your day. Furthermore, it contains a good amount of fibre, which aids digestive health.
It is mildly earthy and neutral in flavour, making it the perfect complementary base to fully absorb and showcase the intensity of any accompanying soup.
Amala is traditionally enjoyed hot with drawing soups, and is ideally paired with Ewedu, Gbegiri, Okro, or a rich Efo Riro.
