Prawn Ukodo (Delta Pepper Soup)

Yam pepper soup made with prawns, yam cubes, ripe plantains, dried fish, palm oil, and a blend of ukodo spices, ehuru, and fresh scent leaves

Ingredients:

  • 1 lb prawns, cleaned and deveined
  • 2 medium yams, cubed
  • 2 ripe plantains, sliced
  • 1 cup palm oil
  • 1 large onion, chopped
  • 4 scotch bonnet peppers
  • 2 seasoning cubes
  • 1 tbsp ukodo spice blend
  • 1 tsp ground ehuru
  • 2 scent leaves, chopped
  • Salt to taste
  • 4 cups water
  • 100g dried fish, cleaned

Equipments:

  • Cooker
  • Cooking utensils
  • Pot

Cooking Instructions:

STEP 1: Season prawns with salt and 1 seasoning cube for 20 minutes.
STEP 2: Heat palm oil in a large pot.
STEP 3: Add chopped onions and fry until golden.
STEP 4: Add cubed yam and fry for 5 minutes.
STEP 5: Add water and bring to boil.
STEP 6: Add dried fish and cook for 10 minutes.
STEP 7: Add sliced plantains and cook for 8 minutes.
STEP 8: Add ukodo spice blend, ground ehuru, and scotch bonnet peppers.
STEP 9: Add remaining seasoning cube and cook for 5 minutes.
STEP 10: Add seasoned prawns and cook for 4 minutes until pink.
STEP 11: Add chopped scent leaves and cook for 1 minute.
STEP 12: Adjust seasoning and serve hot.
