Crispy fried fish simmered in rich tomato and pepper sauce for a hearty, satisfying meal.
STEP 1: Cut fish into 3-4 slices each. Wash thoroughly and pat dry with a paper towel.
STEP 2: Season fish with ½ teaspoon of salt, garlic powder, ginger powder, and onion powder. Mix well to coat and set aside.
STEP 3: Heat oil in a large pot or wok. Deep fry the fish until golden brown on each side. Flip for even cooking. Cook
for about 8 minutes (4 minutes per side), then remove and place on a paper towel to absorb excess oil.
STEP 4: In a blender, put in tomatoes, onions, bell pepper, garlic, ginger, and green onions. Blend into a puree.
STEP 5: Pour 1 cup of oil into another pot. Heat on high for about 5 minutes, then add the puree. Cook for about 10 minutes
until the pepper/tomato sauce shrinks and starts sticking to the bottom.
STEP 6: Add ½ teaspoon of salt, Maggi, and ground white pepper. Stir well.
STEP 7: Add fried fish and stir to ensure the sauce properly coats the fish. Simmer together for about 3 minutes, then turn off the heat.
STEP 8: Enjoy warm!
