Kokote Fish Sauce with Ugu Leaves

Savory kokote fish sauce simmered with pepper, onion mix, and fresh ugu leaves for a simple, vegetable sauce.

Ingredients:

  • 1 cup ugu (fluted pumpkin) leaves, shredded
  • 1 cup blended tomatoes & peppers
  • 1 onion (sliced)
  • 1 cup fried Kokote fish (flaked)
  • 3 tbsp palm oil or vegetable oil
  • Salt & seasoning to taste

Equipments:

  • Cooker
  • Cooking utensils
  • Pot

Cooking Instructions:

STEP 1: Heat oil in a pot and sauté sliced onion until translucent.
STEP 2: Add the blended tomato-pepper mix. Fry for 10–15 minutes, stirring frequently.
STEP 3: Season with salt and seasoning cube. Add flaked Kokote and mix well.
STEP 4: Stir in the ugu leaves and let it simmer uncovered for 3–5 minutes until wilted.
STEP 5: Serve over boiled yam, potatoes, or rice.
