Jollof Rice with Arin wo

Smoky jollof rice cooked with dried fish for a deep, fish flavor.

Ingredients:

  • 3 cups rice
  • 1 cup of arin wo (wash and remove bones)
  • Tomato and pepper paste (tomatoes,tatashe,shombo,onions,atarodo)
  • Oil as required
  • Ginger and garlic paste
  • 1 medium onion sliced
  • Seasoning and spices
  • Salt
  • 2 tbsp ground crayfish
  • 1 sachet tomato paste
  • Water as required

Equipments:

  • Cooker
  • Cooking utensils
  • Pot

Cooking Instructions:

STEP 1: Put some oil in a pot and add the ginger and garlic paste, add some of the sliced onions and fry till translucent.
STEP 2: Add the tomato and pepper paste allow to cook for some mins then add the tomato paste and fry till some oil forms
on top under low heat add enough water to cook the rice you can add more later when required.
STEP 3: Add your seasoning and spices then add the dried fish and crayfish. Bring to boil.
STEP 4: Adjust the seasoning then wash the rice and add to the pot.
STEP 5: When almost cooked add the remaining sliced onions and allow to cook till done garnish with sliced cucumbers and tomatoes.
