Grilled Spicy Pokun Fish

Grilled Pokun fish marinated in paprika, garlic, thyme, and lemon, charred to perfection and served hot with plantains, spicy sauce, or salad.

Ingredients:

  • 1 whole Pokun fish, cleaned and scored
  • 1 tbsp paprika
  • 1 tsp black pepper
  • 1 tsp thyme
  • 1 tbsp lemon juice
  • 2 cloves garlic (minced)
  • 2 tbsp vegetable oil
  • Salt
  • 1 seasoning cube

Equipments:

  • Grill/Oven
  • Cooking utensils
  • Pot

Cooking Instructions:

STEP 1: Thoroughly clean and scale the Pokun fish, removing the innards. Pat dry with paper towels and make diagonal cuts on both sides of the fish.
STEP 2: In a bowl, mix paprika, black pepper, thyme, lemon juice, minced garlic, vegetable oil, salt, and seasoning cube into a marinade.
STEP 3: Rub the marinade into the fish, making sure it gets into the cuts and cavity. Place in a dish, cover, and refrigerate for at least 1–2 hours to marinate.
STEP 4: Preheat a grill or oven to medium heat (about 180°C/350°F). Place the fish on a foil-lined tray or grill rack.
STEP 5: Grill for 15 minutes on each side, basting occasionally with leftover marinade or oil to keep the fish moist.
STEP 6: The fish is ready when it flakes easily with a fork and is nicely charred on the outside. Serve hot with grilled plantains, spicy pepper sauce, or a side salad.
