Ewedu with Gbegiri Soup

A classic Nigerian soup duo. The meal consists of Gbegiri, a smooth bean soup made from peeled beans, and Ewedu, a slippery soup made from fresh jute leaves.

Ingredients:

Gbegiri
  • 1 cup brown or black-eyed beans (peeled)
  • 1 tsp ground crayfish
  • 1 scotch bonnet (blended or crushed)
  • 1 small onion (chopped)
  • 1 tbsp palm oil
  • 1 seasoning cube
  • Salt to taste
Ewedu
  • 2 cups fresh ewedu leaves (or 1 cup frozen)
  • 1 tsp ground crayfish
  • ½ tsp potash (kaun) or baking soda (optional, for softness)
  • 1 seasoning cube
  • Salt to taste
