Egusi Ijebu

Rich egusi soup is made of ground melon seeds simmered in rich pepper and tomato sauce.

Ingredients:

  • 2 cups ground egusi (melon seeds)
  • 2 cooking spoons palm oil (about 6–8 tablespoons)
  • 2 tablespoons ground crayfish
  • 3 medium dried tatashe or red bell peppers (rehydrated and blended)
  • 2–3 scotch bonnets (ata rodo), blended
  • 1 medium onion, chopped or blended
  • 3 cups meat stock or water
  • Assorted meats (shaki, goat meat, beef – pre-boiled)
  • Smoked fish or stockfish (washed and deboned)
  • 2 seasoning cubes (Maggi or Knorr)
  • Salt to taste
  • Locust beans (optional, about 1 tablespoon)
  • Ground pepper (optional, for extra heat)
