Abo Fish and Yam Porridge

Ingredients:

  • 500g Abo fish (fresh or rehydrated dried)
  • 6 medium yam cubes (peeled and diced)
  • 1 onion (sliced)
  • 3 scotch bonnet peppers (blended)
  • 1/4 cup palm oil
  • 2 seasoning cubes
  • Salt to taste
  • Crayfish (optional)
  • Scent leaves (optional)

Cooking Instructions:

Step 1: Peel and cut the yam into bite-sized cubes. Rinse and place in a pot. Step 2: Add enough water to cover the yam, then add sliced onions, blended pepper, seasoning cubes, and salt. Step 3: Cook on medium heat until the yam begins to soften (about 10–12 minutes). Step 4: Add palm oil and the Abo fish. Stir gently to avoid breaking the fish. Step 5: Continue cooking until the yam is soft and slightly thickened. You may mash a few yam cubes to thicken the porridge. Step 6: Add crayfish and scent leaves if using, stir and simmer for 5 more minutes. Step 7: Serve hot and enjoy the balance of soft yam and rich fish flavor.
